Here are some great recipes shared by my high school friend, Roma, for incredible appetizers.  Enjoy!

Blue cheese and carmelized onion squares, Oven 425*

You can either make a crust as follows, or use a ready made pie crust.

Crust:

2 C. flour   2 tsp Baking powder    3/4 tsp salt    3/4 C. whole milk    1/4 C. olive oil    2 T. melted butter

Mix flour, baking powder and salt in bowl and whisk.  In separate bowl or glass measure.. mix milk, oil and butter.

Make a well in dry ingredients and slowly pour in liquid. Mix just till blended and smooth.  Turn out on lightly floured surface and knead till smooth. Do not over-knead.

Roll out to a 10X13 rectangle. Place on cookie sheet and reform as necessary. Pierce with a fork and let rest while making topping.

Topping:

2 T. butter    2 T. Olive oil  3 large onions thinly sliced     1 T. fresh rosemary   1 tsp. sugar    1/2 tsp salt     1 1/2 C. crumbled blue cheese.

Melt butter add oil in large skillet. Add onions and saute till start to brown. (10 min)  Add rosemary, sugar and salt. Season to taste with pepper. Continue to cook till dark brown and caramelized. Cool before spreading on dough.  Sprinkle with cheese and bake till bubbles. About 20 min. Cool and cut into squares.

Date Rumache

1 C. Brown sugar  1/2 tsp Ginger   2 T. corn starch   dash salt  1 C. pineapple juice   1/3 C. vinegar   1 T. soy sauce

Mix all ingredients and bring to a boil and dissolve all the sugar and mix flavord. 3 min.

Take pitted dates, and stuff with 1/2 pecan. wrap each pecan with 1/3 slice of bacon.  Hold with toothpick if needed or put seam side down on rack over cookie sheet.  Bake at 400* till browned, turning once.  Can be served warm or at room terperature.

**I hate to tell people what it is because their first reaction isn’t always good….but it is ALWAYS the first appetizer gone whenever I take it anywhere!  It is my favorite go to appetizer of all time! (Roma’s comment!)
